Summary

A solar chimney dryer built from locally available materials was tested on tomatoes, pepper and bitter leaves. Drying 50 kg of produce took roughly 84 to 125 hours, about 65% of the time needed under open sun, with fewer losses, lower running costs than artificial drying, and dried goods of market-grade colour and flavour without microbial contamination.
